I would personally suggest tai-chi, or kenpo karate.

Tai-chi is not really a "fighting" style per se. It involves more focus and concentration, more of an internal art.

Kempo/Kenpo karate uses alot of forms. These forms are designed to showcase how well an individual can stitch together complete series of moves. As a practitioner advances, these forms become very lengthy and difficult.

I know there are several USSD studios in your area that spend alot of time practicing forms, and weapons. This sounds like it is more or less what you are looking for.
